SMOKED SALMON PASTA
During the weekend, all the members of the family are home and it´s normal to think of what food I should prepare for them for lunch that I will not have to spend hours preparing, yet must be healthy.
So I came up with pasta. I am not a professional cook, but I try to cook as much as I can for my family. Thanks to modern technology, we can find many recipes online that suits our need. In here I follow the recipe from “k-ruoka”. I prepared the fresh salad first before the rest of the cooking. I used iceberg lettuce, tomatoes, red bell pepper, red onion and feta cheese in olive oil and olives.
So this is really simple yet I enjoy preparing. Ingredients are smoked salmon, pasta, onion, garlic, oil, black pepper, food cream, lemon juice, salt, dill, vegetables like carrots and broccoli.
First is to boil the water where I will boil the pasta. Then I removed the skin of salmon and sliced into small pieces. I also at this stage started to steam the carrots and broccoli.
Once the water is boiling, I cooked the pasta based on the instruction written on its package.
Next is to prepare the sauce while the pasta is cooking. Heat oil in medium heat and add the onion and garlic. Cook until soft then add the cream until it boils. Add lemon juice, salt and pepper. Once pasta is cooked then drain.
Then add the smoked salmon to the sauce and add the dill. That´s it! I add some grated cheese on top before serving.
Finally, add the salad and the steamed vegetables. My son finished all the broccoli first before eating the rest of the food.
So, here is one example of our Sunday lunch. Rest of the day is spending as much time with the family and relaxing.
I miss eating healthy food. When you are in Asia, it’s hard to resist rice and other fatty food😆. More recipe and story to share pls😉
