Kale Chicken Adobo is one of my new recipes. Adobo is one of my favourite Filipino food and because I like experimenting in my kitchen, I cooked this.
Kale Chicken adobo is an easy and healthy menu to try. During the time that I am still on leave from work, I don´t make the weekly menu as serious as when I am a working mom. So whatever I thought I feel like cooking for whatever is there in the kitchen and the refrigerator, I try to figure out what to cook.

I cook simple food for the family, not so much strong spices because of my small kids. However, I try to make once in a while Filipino foods for them so they will recognize in which cuisine is it.
Why Kale Chicken Adobo as Kale is the additional ingredients for this? This Kale was introduced to me by my aunt a few years back and I started liking it. Eventually, I learned that it is very healthy. So here is my recipe.
Kale Chicken Adobo
- 500g chicken fillet
- 1 onion chopped
- 5 cloves garlic
- 3 tbsp soy sauce
- 1 tbsp vinegar
- 1 cup of water
- 2 bay leaves
- 1 tsp black pepper
- 5 potatoes sliced
- 1 eggplant
- Kale sliced
- Put oil in the frying pan on medium heat
- Fry potato in oil for 3 minutes, set aside
- Saute garlic&onion until brown
- Add chicken for 10 minutes and stir
- Put soy sauce and stir
- Add water
- Add vinegar and let it be
- Cover for 5 minutes
- Add potato and eggplant
- Simmer for about 15 minutes
- Serve with steamed rice
You can add more spices if you feel, but this is exactly how I like it.
I heard that this Kale is like our vegetable in my country which is the Moringa. There are a lot of nutrients or vitamins. If you try this recipe, let me know by commenting below.
