Easy Mandarin Chocolate Cake Recipe

Mandarin chocolate cake is easy and quick recipe you can make easily. If you are looking for chocolate cake and wants your little one to help, this one is good to try.

Actualy I wasn´t supposed to make mandarin chocolate cake. I am ready to buy a ready-made cake for fathers day (2nd Sunday of November in Finland). Why? I hurt my arms and my back the week before fathers day so I thought of just keep it easy.

Then again, I usually make our cake whatever the occasion is. Why not this time? Then my son starts asking to bake something, so okay then. We have still mandarins at home from last time we went to grocery store and all of the necessary ingredients for making simple cake.

My three years old son did all the mixing and really eager to do the baking. I let him them, though as you know, baking with a toddler can be a little messy plus a lot of tasting in between.

It was full of fun and easy bonding moment for us. Amazingly, he recognize already and know what are the names of the ingredients.

So what are the ingredients I used for this cake?

Ingredients for Mandarin Chocolate Cake:

  • 3 dl flour
  • 2.5 dl sugar
  • 2 tbsp cacao powder
  • 2 tsp baking powder
  • 1 tsp vanilla sugar
  • 150 g melted margarine
  • 2 eggs in room temperature
  • 1 dl milk
  • 0.75 dl mandarin juice
  • 1 tsp of grated mandarin skin

For the toppings

  • 150 g baking dark chocolate
  • 1.5 dl cream
  • 1 tbsp margarine
  • any decorations you want

Procedure

  • First, put the oven to 175 degree Celsius
  • Melt the margarine and let it cool
  • Mix all the dry ingredients
  • Combine the milk, margarine, egg and juice
  • Mix well and add the grated skin of mandarin
  • Grease the baking tray and put bread crumbs, if you don’t want to do this, you can also put the baking paper instead of greasing the baking tray
  • Put to oven and bake for 30 minutes

Toppings

In a pan, add all the ingredients for the toppings and let it melt. Mix all the time to avoid burning it. Put on top of the cake and slowly cover the whole area of the cake from top to sides.

Then the best part for the kids, decorating and tasting the decorations plus the toppings! I know, there is always that part but that’s the fun of baking with the little master chefs wanna be 🙂

Anyway, if you have more time, you can slice the cake into two and make some fillings of your choice. This cake works perfectly fine with the cream fillings or you can make some chocolate mousse fillings for it. In our case, I am just happy with this cake we made. Usually have fillings but this is chocolate cake, for sure everyone will love it!

When ready, put the cake in the refrigerator for a night. This mandarin chocolate cake is best the day after.

I had a little conversation with my little baker as I had to tell, we are not gonna eat the cake yet right away. He was happy about that, but the next morning he was the first to shout for the cake time for daddy’s Fathers day celebration!

How kids can eat so fast their cakes when it is chocolate cake?
