Banana Berries Muffins is Quick and Easy

Looking for a quick snacks or dessert for your family? Do you have banana left in your kitchen but wants some other recipe?

I never thought I would make banana berries muffins before. Here I am anyway, experimenting with the berries freshly picked from my backyard garden.

During summertime, we mostly travel around the country. After travelling and being in a long drive my relaxing place is my garden. Its is always nice to see the berries getting ready. I have strawberries, raspberries, blackcurrant and redcurrant that I’m having a little competition with the birds. Gooseberries are always the last one to be ready. Apples and cherries are also available in the garden.

One thing I learned living in this country with four season is to use everything what the summer/autumn can offer for the winter time to be consumed.

It is always nice to go outside, pick up berries straight from the backyard. I usually make juice and jam from my berries to consume during winter time. Another year will come and the new berries will be harvested.

I haven’t actually been in the forest this year yet, I don’t think I will have time even though it is also blueberries time. I realized that I have used all the blueberries from the freezer.

Finnish facts everyone must know

Do you know that in Finland, even though someone owns the forest with mushrooms, wild berries such as blueberries, cranberries, cloudberry or lingonberry, everyone can pick up berries from that forest? That is called jokamiehenoikeus” or in English “every mans rights” which means that everyone has the rights to enjoy and use everything from the wild for free and doesn’t even need to ask permission from the landowner. Finland is mostly forest, so in the summer there are so much free foods everywhere.

In Finland there is the every mans right so make sure to use it by going in the forest and pick up super foods for free!

Going back to berries in my backyard, my children like to hang out in there. They pick up by themselves whatever berry they like and they have free snacks. Sometimes, they request for me to bake for them.

What to bake then?

Berries are available just right there in my backyard and noticed that I have two bananas left and getting over riped. I know, we’ve been travelling so basically haven’t been in groceries and house is almost empty without food. I don’t want to waste the banana either so my imaginations came along. What quick recipe I can make for snacks?

I then decided to make banana berries muffins. Banana berries muffins sound realistic for this situation and wouldn’t even take time than 15 minutes to be in the oven. All the basic ingredients are found in my kitchen.

So I went outside and pick up a few raspberries, blackcurrant and redcurrant. Lets get started how to make my quick banana berries muffins.

Ingredients include egg, flour, sugar, baking powder, fresh milk and vegetable oil. By the way, as you read it right, I used oil instead of melted butter or melted margarine but if you prefer those it’s okay too. Detailed information of the recipe below. 

Banana Berries Muffins

Ingredients
  • 0.75 dl fresh milk
  • 1.0 dl oil
  • 3 tsp baking powder
  • 2 bananas
  • 1 egg
  • 1 dl sugar
  • 3.5 dl flour
  • 2 dl Berries of your choice
  • Optional Toppings: Powdered sugar and Berries
Procedure:
  • 1. Peel and smashed the bananasĀ 
  • 2. In a separate bowl, combine all the dry ingredients and mix well
  • 3. Add in the dry ingredients the smashed bananas
  • 4. Add egg
  • 5. Add the oil
  • 6. Add the milk
  • 7. Mixed all the ingredients well
  • 8. In a muffins tray, put the paper muffins cup
  • 9. Fill about 1/3 of the dough to the cup
  • 10. Add the desired berries and fill another dough on top to make it total of 2/3
  • 11. Place the tray in the preheated 200 deg C oven
  • 12. Baked for 15 minutes
  • 13. Optional you can put powdered sugar and berry before serving. I used raspberry for this toppings.


Thats it! Simple yet healthy snacks for the whole family. I made 22 pcs for this dough and it was gone so fast. I think I will make more later on.
